Ingredients

  • 2 pounds fresh figs, stemmed, washed and halved
  • 1½ cups granulated sugar
  • 2 teaspoons lemon juice

Directions

  1. In a large saucepan, combine the figs, sugar, and lemon juice.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat to low and simmer for 25 minutes, stirring occasionally, until the sugar has dissolved and the mixture has thickened.
  4. Remove the pan from the heat and let cool to room temperature.
  5. Transfer the preserves to an airtight container and store in the refrigerator for up to 2 weeks.
