Ingredients
- 2 pounds fresh figs, stemmed, washed and halved
- 1½ cups granulated sugar
- 2 teaspoons lemon juice
Directions
- In a large saucepan, combine the figs, sugar, and lemon juice.
- Bring the mixture to a boil over medium-high heat, stirring occasionally.
- Reduce the heat to low and simmer for 25 minutes, stirring occasionally, until the sugar has dissolved and the mixture has thickened.
- Remove the pan from the heat and let cool to room temperature.
- Transfer the preserves to an airtight container and store in the refrigerator for up to 2 weeks.
