Ingredients

  • 1/2 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups diced potatoes
  • 1/4 cup beef broth
  • 1/4 cup shredded cheddar cheese
  • 8-10 small flour tortillas
  • 1/4 cup sour cream
  • 1 tablespoon fresh chopped parsley

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 7-8 minutes. Add the onion and garlic and cook until softened, about 3-4 minutes.
  2. Add the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute.
  3. Add the potatoes and beef broth. Cook, stirring occasionally, until the potatoes are tender, about 10 minutes.
  4. Stir in the cheese and cook for an additional 2 minutes.
  5. Warm the tortillas in a skillet over medium heat or in the microwave. Divide the beef mixture among the tortillas and top with sour cream and parsley.
  6. Serve the tacos with your favorite dipping sauce.
