- 2 cups diced potatoes
- 1/4 cup beef broth
- 1/4 cup shredded cheddar cheese
- 8-10 small flour tortillas
- 1/4 cup sour cream
- 1 tablespoon fresh chopped parsley
Directions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 7-8 minutes. Add the onion and garlic and cook until softened, about 3-4 minutes.
- Add the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for 1 minute.
- Add the potatoes and beef broth. Cook, stirring occasionally, until the potatoes are tender, about 10 minutes.
- Stir in the cheese and cook for an additional 2 minutes.
- Warm the tortillas in a skillet over medium heat or in the microwave. Divide the beef mixture among the tortillas and top with sour cream and parsley.
- Serve the tacos with your favorite dipping sauce.
