Ingredients
- 4 large potatoes
- 1/2 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon chili powder
- 2 tablespoons olive oil
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced jalapeno pepper
- 1 pound cooked and peeled shrimp
- 1/2 cup sour cream
- 1/4 cup minced fresh cilantro
- 1/2 cup shredded Mexican-style cheese
Directions
- Preheat oven to 400°F. Scrub the potatoes and prick several times with a fork.
- Mix together the smoked paprika, garlic powder, onion powder, oregano, cumin and chili powder.
- Rub the potatoes with olive oil, then sprinkle the spice mixture on top. Place the potatoes on a baking sheet and bake for 40 minutes or until tender.
- Meanwhile, in a large skillet heat the olive oil over medium heat. Add the onion, bell pepper and jalapeno pepper and cook for 5 minutes, stirring occasionally. Add the shrimp and cook for an additional 5 minutes.
- In a small bowl, mix together the sour cream and cilantro.
- Cut the potatoes in half lengthwise and scoop out the insides. Place the potato skins back on the baking sheet, skin side up.
- Top the potatoes with the shrimp mixture, then spoon the sour cream mixture over the top. Sprinkle with the cheese.
- Return the potatoes to the oven and bake for an additional 5 minutes or until the cheese is melted.
- Serve hot.
