Ingredients

  • 3 cups chopped seedless watermelon
  • 1/2 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1 clove garlic, minced
  • 1 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon chopped fresh basil
  • Salt and pepper to taste

Directions

  1. In a blender, combine the watermelon, cucumber, onion and garlic.
  2. Add the lemon juice, olive oil, mint and basil and blend until smooth.
  3. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 2 hours before serving.
