Ingredients
- 3 cups chopped seedless watermelon
- 1/2 cup chopped cucumber
- 1/4 cup chopped red onion
- 1 clove garlic, minced
- 1 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh mint
- 1 teaspoon chopped fresh basil
- Salt and pepper to taste
Directions
- In a blender, combine the watermelon, cucumber, onion and garlic.
- Add the lemon juice, olive oil, mint and basil and blend until smooth.
- Season with salt and pepper to taste.
- Chill in the refrigerator for at least 2 hours before serving.
