Ingredients

  • 1 large eggplant, cut into 1/2 inch slices
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can Italian-style diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish.
  2. Heat the olive oil in a skillet over medium heat. Add the eggplant slices and garlic, and cook until the eggplant is tender, about 5 minutes.
  3. Stir in the diced tomatoes, Italian seasoning, salt, and pepper and cook for 5 minutes.
  4. Arrange the eggplant slices in the prepared baking dish. Top with the tomato sauce, Parmesan cheese, and mozzarella cheese.
  5. Bake for 30 minutes in the preheated oven, until the cheese is golden and bubbly.
