Ingredients

  • 2 pounds boneless lamb shoulder, cut into chunks
  • 4 tablespoons olive oil, divided
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and cut into chunks
  • 2 parsnips, peeled and cut into chunks
  • 4 cups beef or vegetable broth
  • 2 tablespoons Worcestershire sauce
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Directions

  1. Set the Instant Pot to 'Saute' mode and heat 2 tablespoons of olive oil.
  2. Add the lamb chunks to the pot and cook until browned on all sides. Remove the lamb and set it aside.
  3. Add the remaining 2 tablespoons of olive oil to the pot and saute the onions and garlic until soft and translucent.
  4. Return the lamb to the pot and add the carrots, potatoes, parsnips, beef or vegetable broth, Worcestershire sauce, bay leaves, thyme, and rosemary.
  5. Season with salt and pepper to taste.
  6. Secure the lid of the Instant Pot and set it to 'Manual' or 'Pressure Cook' mode for 30 minutes.
  7. Once the cooking time is complete, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  8. Carefully remove the lid and discard the bay leaves.
  9. Serve the Irish stew hot, garnished with fresh chopped parsley.
