Ingredients

  • 1 ripe avocado
  • 2 large eggs
  • 2 whole wheat English muffins
  • 4 slices of turkey bacon
  • 1 tablespoon olive oil

Directions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the avocado in half, remove the pit, and scoop the flesh into a small bowl. Mash it with a fork until desired consistency. Season with salt and pepper to taste.
  3. In a medium-sized skillet, heat the olive oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still slightly runny, about 3 minutes. Season with salt and pepper.
