Set the Instant Pot to sauté mode. Heat the olive oil in the pot.
Add the onion and garlic and sauté until the onion is softened and the garlic is fragrant, about 5 minutes.
Add the tomato paste, oregano, thyme, pepper, and salt and stir to combine.
Add the chicken stock, honey, and lemon juice and stir to combine.
Add the chicken breasts to the pot, making sure they are submerged in the liquid. Close and lock the lid of the Instant Pot, making sure the pressure valve is set to “sealing”.
Set the Instant Pot to manual high pressure for 10 minutes. When the timer goes off, do a quick release of the pressure.
Carefully remove the chicken from the pot and shred with two forks. Serve with the sauce.
