Ingredients

  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups grated cheese
  • 2 pounds potatoes, peeled and thinly sliced
  • 2 tablespoons minced fresh parsley

Directions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with butter.
  2. In a medium bowl, whisk together the cream, garlic powder, salt, and pepper. Pour 1/4 cup of the cream mixture into the muffin tin.
  3. Sprinkle 1/4 cup of the cheese into the bottom of each muffin cup.
  4. Arrange half of the potatoes in a single layer over the cheese. Pour 1/4 cup of the cream mixture over the potatoes.
  5. Sprinkle 1/4 cup of the cheese over the potatoes.
  6. Arrange the remaining potatoes on top of the cheese in a single layer. Pour the remaining cream mixture over the potatoes.
  7. Sprinkle the remaining cheese over the top of the potatoes.
  8. Bake for 45 minutes.
  9. Remove from oven and let cool for 10 minutes before serving. Sprinkle with minced parsley.
