Ingredients

  • 1 cup long-grain basmati rice
  • 2 tablespoons vegetable oil
  • 1 medium onion, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon cardamom powder
  • 1 teaspoon garam masala powder
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 green chili, finely chopped
  • 1/2 cup frozen green peas
  • 2 cups chicken broth or water
  • Salt, to taste
  • Fresh cilantro, for garnish

Directions

  1. Set the Instant Pot to sauté mode and heat the oil. Add the onion and sauté until it turns translucent.
  2. Add the cumin seeds, cardamom powder, garam masala powder, garlic, ginger, and green chili. Sauté for a few minutes until the spices are fragrant.
  3. Add the rice, frozen green peas, chicken broth or water, and salt. Stir everything together.
  4. Close the lid of the Instant Pot and set it to “Rice” mode. Cook for 10 minutes.
  5. When the cooking time is up, let the pressure release naturally for 10 minutes. After that, release the remaining pressure manually.
  6. Open the lid and fluff the pilau rice with a fork. Serve hot with a garnish of fresh cilantro.
