Ingredients

  • 1 can coconut milk
  • 3 tablespoons tapioca pearls
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla extract
  • 3 ripe bananas, sliced
    • Directions

      1. In a medium saucepan, bring the coconut milk to a boil over medium-high heat.
      2. Add the tapioca pearls and reduce the heat to low. Stir constantly for 8-10 minutes, until the pearls are soft and thickened.
      3. Stir in the sugar and vanilla extract, and cook for an additional 2-3 minutes.
      4. Remove from the heat and let cool for 5 minutes.
      5. In a bowl, layer the banana slices and tapioca pudding until desired thickness is achieved.
      6. Chill in the refrigerator for 30 minutes before serving.
