Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup diced mixed fruits (strawberries, blueberries, raspberries, etc)
  • 1/2 cup diced mixed nuts (almonds, walnuts, pecans, etc)
  • 1/2 cup diced dried fruits (apricots, dates, pineapple, etc)
  • 1/4 cup sweetened condensed milk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar with an electric mixer until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually beat in the flour mixture until just blended.
  6. Fold in the diced fruits, nuts, and dried fruits.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center comes out clean.
  9. Cool cake for 10 minutes before removing from pan. Cool completely before serving.
