Ingredients

  • 1 pound smoked sausage, sliced
  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1/4 cup chopped fresh parsley

Directions

  1. In a slow cooker, combine the sausage, black beans, onion, bell pepper, garlic, Creole seasoning, thyme, cayenne pepper, and black pepper. Pour the chicken broth over the top and stir to combine.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
  3. Stir in the parsley and serve over cooked rice.
