Ingredients
- 1 cup dry black beans, soaked overnight
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 cups vegetable broth
Directions
- Soak the beans overnight in plenty of water.
- In the Instant Pot, heat the olive oil over medium heat. Add the onion, bell pepper, garlic, cumin, smoked paprika, salt and pepper. Cook for 3 minutes, stirring occasionally.
- Add the beans and vegetable broth. Lock the lid and cook for 35 minutes at high pressure.
- Quick-release the pressure and open the lid. Stir the beans and adjust the seasoning if needed.
- Serve the black beans with cooked rice, avocado, cilantro and a dollop of sour cream.
