Ingredients

  • 1 cup macadamia nuts, chopped
  • 1 cup walnuts, chopped
  • 1 cup dried pineapple, chopped
  • 2 eggs, lightly beaten
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder

Directions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the macadamia nuts, walnuts, and dried pineapple.
  3. In a separate bowl, whisk together the eggs, honey, vanilla extract, cinnamon, and baking powder.
  4. Add the wet ingredients to the dry ingredients and mix until everything is well combined.
  5. Pour the mixture into a greased 9x5-inch loaf pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
