Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups vegetable broth
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (9 ounce) package frozen cheese tortellini
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Directions

  1. In a large pot over medium heat, heat the olive oil. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  2. Add the carrots, celery, oregano, basil, red pepper flakes, salt, and black pepper and cook, stirring occasionally, for 5 minutes.
  3. Add the vegetable broth and diced tomatoes and bring to a boil. Reduce the heat to low and add the frozen tortellini. Simmer for 15 minutes, stirring occasionally.
  4. Remove from the heat and stir in the Parmesan cheese and parsley.
