Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 3 carrots, peeled and diced
- 2 celery stalks, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups vegetable broth
- 2 (14.5 ounce) cans diced tomatoes
- 1 (9 ounce) package frozen cheese tortellini
- 1/2 cup freshly grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Directions
- In a large pot over medium heat, heat the olive oil. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
- Add the carrots, celery, oregano, basil, red pepper flakes, salt, and black pepper and cook, stirring occasionally, for 5 minutes.
- Add the vegetable broth and diced tomatoes and bring to a boil. Reduce the heat to low and add the frozen tortellini. Simmer for 15 minutes, stirring occasionally.
- Remove from the heat and stir in the Parmesan cheese and parsley.
