Ingredients
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon ground espresso or instant coffee powder
- 1 large egg
- 1 3/4 cups all-purpose flour
Directions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- In a medium bowl, beat together butter, sugars, vanilla, salt, baking soda, and espresso powder until light and fluffy.
- Add egg and beat until combined.
- Stir in flour until just combined.
- Using a cookie scoop, scoop dough onto prepared baking sheet. Bake for 12-14 minutes, until edges are lightly golden.
- Let cool on baking sheet for 5 minutes before transferring to a cooling rack to cool completely.
