Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 cup vegetable oil
  • 2 cups white sugar
  • 3 eggs
  • 1 (15 ounce) can pumpkin puree
  • 1/2 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, whisk together the oil, sugar, eggs, and pumpkin puree until smooth. Add the dry ingredients and mix until just combined.
  4. Pour the batter into the prepared loaf pans. Sprinkle with chopped walnuts, if desired. Bake in preheated oven for 60 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
