Ingredients

  • 4 cups mashed potatoes
  • 1/4 cup shredded cheese
  • 1/4 cup cooked bacon, diced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko bread crumbs
  • 3 tablespoons olive oil

Directions

  1. In a large bowl, mix together the mashed potatoes, cheese, bacon, parsley, chives, garlic powder, onion powder, salt, and pepper.
  2. Form the mixture into 12 patties, about 3 inches in diameter.
  3. In a shallow bowl, add the flour. In another shallow bowl, add the beaten eggs. In a third shallow bowl, add the panko bread crumbs.
  4. Dredge each patty in the flour, then the egg, and then the breadcrumbs.
  5. In a large skillet, heat the oil over medium-high heat. Add the patties and cook until golden brown and crispy, about 2-3 minutes per side.
  6. Transfer to a plate lined with paper towels to absorb any excess oil. Serve warm.
