Ingredients
- 4 cups mashed potatoes
- 1/4 cup shredded cheese
- 1/4 cup cooked bacon, diced
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko bread crumbs
- 3 tablespoons olive oil
Directions
- In a large bowl, mix together the mashed potatoes, cheese, bacon, parsley, chives, garlic powder, onion powder, salt, and pepper.
- Form the mixture into 12 patties, about 3 inches in diameter.
- In a shallow bowl, add the flour. In another shallow bowl, add the beaten eggs. In a third shallow bowl, add the panko bread crumbs.
- Dredge each patty in the flour, then the egg, and then the breadcrumbs.
- In a large skillet, heat the oil over medium-high heat. Add the patties and cook until golden brown and crispy, about 2-3 minutes per side.
- Transfer to a plate lined with paper towels to absorb any excess oil. Serve warm.
