Thai Shrimp and Snow Peas

Ingredients

  • 1 lb. shrimp, peeled and deveined
  • 1/4 cup soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • 2 tablespoons vegetable oil
  • 1/2 cup snow peas, trimmed and halved
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons scallions, chopped
  • 2 cups cooked rice or noodles

Directions

  1. In a small bowl, combine the soy sauce, fish sauce, brown sugar, sesame oil, garlic, and ginger. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2-3 minutes, or until just cooked through.
  3. Add the snow peas and stir-fry for 1-2 minutes, or until just tender.
  4. Add the soy sauce mixture and stir-fry for another 1-2 minutes, or until the shrimp is cooked through and the sauce is thickened.
  5. Stir in the cilantro and scallions and serve over steamed rice or noodles.
