Ingredients

  • 2 tablespoons ghee
  • 2 tablespoons raw rice
  • 1/2 cup freshly grated coconut
  • 1/4 cup sugar or jaggery
  • 4 cups water

Directions

  1. Heat the ghee in a heavy-bottomed pan over medium heat.
  2. Add the raw rice and stir for a few minutes until fragrant.
  3. Add the freshly grated coconut and stir until the coconut is lightly toasted.
  4. Add the sugar or jaggery and stir until dissolved.
  5. Add the water and bring to a boil.
  6. Reduce the heat to low and simmer, stirring occasionally, for 20 minutes or until the rice is cooked.
  7. Serve the kheer warm or chilled.
