Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup Arborio rice
  • 1 cup frozen corn
  • 2 cups vegetable broth
  • 1/4 cup white wine
  • 1/2 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Select the Sauté setting on the Instant Pot and heat the oil.
  2. Add the onion and garlic and sauté for 2-3 minutes, until the onion is softened.
  3. Add the rice, corn, broth, wine, Italian seasoning, salt, and pepper.
  4. Secure the lid and set the pressure release valve to Sealing.
  5. Select the Manual setting and set the cook time to 5 minutes.
  6. When the cook time is complete, quick release the pressure.
  7. Stir in the Parmesan cheese.
  8. Serve warm.
