Ingredients

  • 2 live lobsters, about 1 1/2 pounds each
  • 4 tablespoons unsalted butter
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 4 cups chicken or seafood stock
  • 1 cup dry sherry
  • 1 cup heavy cream
  • 1 bay leaf
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Chopped chives for garnish

Directions

  1. Bring a large pot of water to a boil and add the live lobsters. Cook for about 8-10 minutes until they turn bright red. Remove from the water and let cool.
  2. Remove the meat from the lobster shells and chop into bite-sized pieces. Set aside.
  3. In a large soup pot, melt the butter over medium heat. Add the onion, celery, and carrots, and cook until softened.
  4. Stir in the tomato paste and flour, and cook for another 2-3 minutes.
  5. Gradually whisk in the chicken or seafood stock and sherry, scraping up any browned bits from the bottom of the pot.
  6. Add the lobster meat, bay leaf, paprika, salt, and pepper. Simmer for about 20-30 minutes until the flavors meld together.
  7. Stir in the heavy cream and cook for another 5 minutes until heated through.
  8. Remove the bay leaf and use an immersion blender to partially puree the soup, leaving some chunks of lobster for texture.
  9. Adjust seasoning if necessary and serve hot, garnished with chopped chives.
