Ingredients

  • 1/3 cup rolled oats
  • 3/4 cup whole wheat flour
  • 1/3 cup millet
  • 1/4 cup flaxseed meal
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup honey
  • 1/4 cup olive oil
  • 1 cup buttermilk

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9x5-inch (23x13 cm) loaf pan and set aside.
  2. In a large bowl, mix together the oats, whole wheat flour, millet, flaxseed meal, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the honey, olive oil, and buttermilk.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
