1/2 pound green beans, trimmed and cut into 1-inch pieces
1 red bell pepper, seeded and cut into 1-inch pieces
1 teaspoon fresh lime juice
1/4 cup fresh Thai basil leaves
Directions
Heat the oil in a large skillet over medium heat. Add the shallots and garlic and cook, stirring, for 2 minutes.
Add the curry paste and cook, stirring, for 1 minute. Add the coconut milk, fish sauce, brown sugar, lemongrass, and red chilies and bring to a simmer.
Add the green beans and bell pepper and simmer for 5 minutes, or until the vegetables are tender. Stir in the lime juice and basil.
Serve hot with steamed rice or noodles.
