Ingredients

  • 2 tablespoons vegetable oil
  • 2 shallots, peeled and chopped
  • 2 cloves garlic, peeled and minced
  • 1-2 tablespoons green curry paste
  • 1 can (14 ounces) coconut milk
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 1 stalk lemongrass, crushed
  • 1-2 red chilies, seeded and chopped
  • 1/2 pound green beans, trimmed and cut into 1-inch pieces
  • 1 red bell pepper, seeded and cut into 1-inch pieces
  • 1 teaspoon fresh lime juice
  • 1/4 cup fresh Thai basil leaves

Directions

  1. Heat the oil in a large skillet over medium heat. Add the shallots and garlic and cook, stirring, for 2 minutes.
  2. Add the curry paste and cook, stirring, for 1 minute. Add the coconut milk, fish sauce, brown sugar, lemongrass, and red chilies and bring to a simmer.
  3. Add the green beans and bell pepper and simmer for 5 minutes, or until the vegetables are tender. Stir in the lime juice and basil.
  4. Serve hot with steamed rice or noodles.
