Ingredients

  • 1 lb. fresh green beans, trimmed and washed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • For the Dill Vinaigrette:
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 2 tablespoons fresh dill, chopped
  • 1 garlic clove, minced
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine green beans, olive oil, garlic powder, onion powder, salt, and pepper. Toss until evenly coated.
  3. Spread green beans onto a parchment-lined baking sheet and roast in preheated oven for 20 minutes, stirring once halfway through.
  4. Meanwhile, make the dill vinaigrette: In a small bowl, whisk together olive oil, red wine vinegar, dill, garlic, sugar, salt, and pepper.
  5. When green beans are done roasting, transfer to a serving bowl. Pour dill vinaigrette over green beans and toss to combine.
  6. Serve immediately.
