Ingredients

  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon garam masala
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup basmati rice, rinsed and drained
  • 2 cups vegetable broth
  • 1/2 cup frozen peas
  • 1/4 cup fresh cilantro, chopped

Directions

  1. Heat the oil in a large saucepan over medium-high heat. Add the cumin seeds and cook for 1 minute, stirring constantly.
  2. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  3. Add the turmeric, garam masala, coriander, cumin, cardamom, cinnamon, pepper, and cayenne (optional) and cook for 1 minute, stirring constantly.
  4. Add the rice and stir to coat with the spices. Add the broth and bring to a boil.
  5. Reduce the heat to low, cover the pan, and simmer for 15 minutes.
  6. Add the peas, cover, and simmer for 5 more minutes, or until the liquid has been absorbed and the rice is tender.
  7. Stir in the cilantro just before serving.
