Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound assorted mushrooms, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 4 carrots, diced
  • 1/2 cup vegetable broth

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and cook for 5 minutes, until the onion is translucent.
  3. Add the mushrooms, oregano, thyme, and salt and cook for 5 minutes, stirring occasionally.
  4. Add the carrots and vegetable broth and bring to a simmer. Simmer for 10 minutes, until the carrots are tender.
