Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 sweet potatoes, diced
  • 1/2 pound pastrami, diced
  • 1/4 cup chicken broth
  • salt and pepper to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the onion and garlic and sauté for 3 minutes.
  3. Add the sweet potatoes and sauté for 5 minutes.
  4. Stir in the pastrami and chicken broth. Reduce the heat to low and cover the skillet.
  5. Cook for 15 minutes or until the sweet potatoes are tender, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Serve and enjoy!
