Stir in onion and garlic. Place flounder fillets in a lightly greased 9x13 inch baking dish. Evenly divide ricotta mixture among the fillets, and spread it over each fillet. Pour wine into the baking dish.
Mix together breadcrumbs and butter, and sprinkle over flounder. Bake in preheated oven for 30 minutes, or until fish is cooked through and stuffing is lightly browned.
