Ingredients

  • 6 flounder fillets
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ricotta cheese
  • 1/2 cup frozen spinach, thawed and squeezed dry
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1/4 cup dry white wine
  • 1/4 cup breadcrumbs
  • 1/4 cup melted butter

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic, and cook until softened, about 5 minutes. In a bowl, mix together ricotta cheese, spinach, Parmesan cheese, parsley, oregano, basil, salt, and pepper.
  3. Stir in onion and garlic. Place flounder fillets in a lightly greased 9x13 inch baking dish. Evenly divide ricotta mixture among the fillets, and spread it over each fillet. Pour wine into the baking dish.
  4. Mix together breadcrumbs and butter, and sprinkle over flounder. Bake in preheated oven for 30 minutes, or until fish is cooked through and stuffing is lightly browned.
