Ingredients

  • 4 tablespoons butter
  • 2 leeks, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 4 cups vegetable stock
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste

Directions

  1. Melt the butter in a large pot over medium heat.
  2. Add the leeks and garlic and cook until the leeks are softened, about 5 minutes.
  3. Stir in the mustard and vegetable stock and bring to a boil.
  4. Reduce the heat to low and simmer for 10 minutes.
  5. Add the cream and cheese and stir until the cheese is melted.
  6. Season with salt and pepper to taste.
  7. Serve hot.
