Maple-Brown Sugar Oatmeal Muffins

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1/4 cup maple syrup
  • 1 tablespoon butter, melted

Directions

  1. Preheat oven to 375°F.
  2. In a medium bowl, combine flour, oats, brown sugar, baking powder, salt, cinnamon and nutmeg. Stir to combine.
  3. In a separate bowl, whisk together milk, oil, egg, maple syrup and melted butter. Mix until combined.
  4. Add wet ingredients to dry ingredients and mix until just combined. Do not over mix.
  5. Spray a muffin tin with non-stick cooking spray. Divide the batter into the muffin tin, filling each about 3/4 full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Remove from oven and let cool for 5 minutes before transferring to a wire rack.
