Ingredients

  • 1 head of cauliflower
  • 1 tablespoon of olive oil
  • 1/2 onion, diced
  • 1 red pepper, diced
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 2 tablespoons of freshly chopped cilantro
  • 1/4 cup of frozen corn
  • 1/4 cup of black beans
  • 1/2 cup of shredded cheese
  • 1/4 cup of salsa

Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Cut the cauliflower into florets and place on a baking sheet. Drizzle with olive oil and season with salt and pepper. Roast in the oven for 15 minutes until golden and tender. Remove from the oven and set aside.
  3. In a large skillet, heat the remaining olive oil over medium-high heat. Add the onion, red pepper, chili powder, cumin, garlic powder, salt, and black pepper. Cook for 5-7 minutes until the vegetables are softened. Add the roasted cauliflower and cook for an additional 2-3 minutes.
  4. Stir in the cilantro, corn, black beans, and cheese. Cook for 3-4 minutes until the cheese is melted and everything is well combined. Taste and adjust the seasoning if necessary.
  5. Serve the cauliflower rice with salsa and enjoy!
