Ingredients

  • 1/2 block extra-firm tofu (drained and pressed)
  • 1/2 cup unsweetened almond milk
  • 1 tablespoon maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 2 tablespoons coconut oil
  • 6-8 slices gluten-free bread

Directions

  1. In a shallow bowl, combine the almond milk, maple syrup, cinnamon, nutmeg, and ginger. Mix until combined.
  2. Cut the tofu into ½ inch thick slices and add to the bowl. Gently toss to coat the tofu.
  3. Heat the coconut oil in a large skillet over medium heat.
  4. Once the oil is hot, add the slices of tofu. Fry until golden brown and crispy on both sides, about 4-5 minutes.
  5. Remove the tofu from the skillet and set aside.
  6. Add the slices of bread to the skillet and cook for 3-4 minutes, or until golden brown and crisp.
  7. To assemble the French toast, layer the pan-fried tofu on top of the French toast slices and serve with maple syrup and fresh fruit.
