Ingredients

  • 1 tablespoon Olive oil
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Ground black pepper
  • 1 cup Parsley, chopped
  • 2 cups Spinach, chopped
  • 3 cups Chicken broth
  • 2 cups Cooked chicken, diced
  • 2 tablespoons White wine vinegar
  • 1/4 teaspoon Red pepper flakes

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for 5 minutes, stirring occasionally.
  3. Add the paprika, oregano, thyme, salt, and black pepper and cook for 1 minute.
  4. Add the parsley, spinach, and chicken broth and bring to a boil.
  5. Reduce the heat to low and simmer for 20 minutes.
  6. Add the chicken and simmer for 10 minutes.
  7. Stir in the vinegar and red pepper flakes and cook for 5 minutes.
  8. Serve warm.
