Ingredients

  • 2 tablespoons butter
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 3 stalks celery, diced
  • 1 large carrot, diced
  • 2 medium potatoes, diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste

Directions

  1. Melt butter in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the celery, carrot, and potatoes and sauté for an additional 5 minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
  4. Stir in the thyme and rosemary and season with salt and pepper to taste. Simmer for an additional 5 minutes.
  5. Remove from heat and let cool for 10 minutes. Use an immersion blender to blend the soup until smooth.
  6. Serve warm. Enjoy!
