Ingredients
2 tablespoons butter
1 cup diced onion
2 cloves garlic, minced
3 stalks celery, diced
1 large carrot, diced
2 medium potatoes, diced
4 cups vegetable broth
1 teaspoon dried thyme

Salt and black pepper, to taste
Directions
Melt butter in a large pot over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
Add the celery, carrot, and potatoes and sauté for an additional 5 minutes.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes.
Stir in the thyme and rosemary and season with salt and pepper to taste. Simmer for an additional 5 minutes.
Remove from heat and let cool for 10 minutes. Use an immersion blender to blend the soup until smooth.
Serve warm. Enjoy!
