Ingredients
- 1/2 pound fresh mushrooms, sliced
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- 1/2 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1/4 cup chopped fresh basil
- 2 cups shredded mozzarella cheese
- 8 lasagna noodles, cooked according to package directions
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, sauté mushrooms, onion, and garlic in olive oil over medium-high heat until mushrooms are tender and liquid has evaporated. Stir in oregano, thyme, salt, and pepper; cook for 1 minute.
- Stir in wine and tomato paste; cook for 2 minutes. Remove from heat and stir in ricotta, Parmesan, parsley, and basil.
- Spread 1/2 cup of the mushroom mixture on the bottom of a 9x13 inch baking dish. Top with 4 lasagna noodles. Spread half of the remaining mushroom mixture over noodles. Sprinkle with 1 cup of mozzarella cheese. Top with 4 lasagna noodles.
- Spread the remaining mushroom mixture over the noodles. Sprinkle with remaining 1 cup mozzarella cheese. Cover with foil.
- Bake in preheated oven for 25 minutes. Uncover and bake for an additional 25 minutes, or until cheese is melted and bubbly.
