In a large bowl, mix together the pork, sage, salt, thyme, black pepper, red pepper flakes, dry mustard, nutmeg, garlic powder, ginger, cayenne pepper and allspice until fully combined.
Form the sausage mixture into patties, about 1/4 inch thick.
Place the patties on a parchment-lined baking sheet and bake for 15 minutes.
Flip the patties over and bake for an additional 10-15 minutes, or until cooked through.
Serve hot with your favorite breakfast sides.
