Ingredients

  • 4 oranges
  • 1 cup cranberries
  • 3 cups sugar
  • 1 lemon
  • 1 cinnamon stick
  • 1/2 teaspoon vanilla extract

Directions

  1. Wash the oranges and lemon thoroughly. Use a sharp knife to cut them into thin slices.
  2. Remove the seeds from the orange and lemon slices. You can use a small spoon or your fingers to do this.
  3. Place the sliced oranges, lemon, cranberries, and cinnamon stick in a large pot.
  4. Add enough water to cover the fruits and bring the mixture to a boil over medium heat.
  5. Reduce the heat to low and let the fruits simmer for about 30 minutes, until they become soft and tender.
  6. Remove the pot from the heat and discard the cinnamon stick.
  7. Carefully transfer the cooked fruits to a blender or food processor. Blend until you achieve a chunky consistency.
  8. Return the blended fruit mixture to the pot. Add sugar and vanilla extract.
  9. Stir well to combine all the ingredients.
  10. Place the pot back on the stove over medium-high heat. Bring the mixture to a boil.
  11. Reduce the heat to low and let the marmalade simmer for about 20-30 minutes, stirring occasionally, until it thickens to your desired consistency.
  12. While the marmalade is still hot, carefully transfer it into sterilized jars. Ensure the jars are tightly sealed.
  13. Allow the marmalade to cool completely before storing it in the refrigerator. It will continue to thicken as it cools.
  14. Serve the orange cranberry marmalade on toast, scones, or your favorite dessert. Enjoy!
