Ingredients

  • 500g fresh okra pods
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 thumb-sized piece of ginger, grated
  • 2 tomatoes, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/4 cup water
  • Fresh cilantro, for garnish

Directions

  1. Wash the okra pods and pat them dry. Trim the ends and cut them into 1-inch pieces.
  2. Heat vegetable oil in a large pan or skillet over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the pan. Cook for another 2 minutes, stirring frequently.
  4. Add the diced tomatoes, ground turmeric, ground cumin, ground coriander, red chili powder, garam masala, and salt. Stir well to combine.
  5. Add the okra pieces to the pan and cook for 5 minutes, stirring occasionally.
  6. Pour in the water, reduce the heat to low, cover the pan, and simmer for 25 minutes or until the okra is tender.
