- 9 lasagna noodles
- 2 cups cooked and shredded chicken breast
- 2 cups fresh spinach, chopped
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 3 cups milk
- 2 cloves garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Directions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large bowl, combine the cooked and shredded chicken, chopped spinach, ricotta cheese, 1 cup of mozzarella cheese, and 1/2 cup of Parmesan cheese. Mix well.
- In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Stir in the flour and cook for an additional minute, stirring constantly.
- Gradually whisk in the milk, ensuring there are no lumps. Cook the sauce, stirring constantly, until it thickens and comes to a simmer.
- Add the dried basil, dried oregano, salt, black pepper, and nutmeg. Stir well to combine.
- Remove the saucepan from heat.
- Spread a thin layer of the white sauce on the bottom of a 9x13-inch baking dish.
- Place 3 lasagna noodles on top of the sauce.
- Spread half of the chicken and cheese mixture over the noodles.
- Pour 1/3 of the white sauce over the chicken and cheese mixture.
- Repeat the layers with 3 lasagna noodles, the remaining chicken and cheese mixture, and another 1/3 of the white sauce.
- Top with the remaining 3 lasagna noodles and pour the remaining white sauce over them.
