Ingredients

  • 2 lbs Jersey fresh tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil, chopped

Directions

  1. Bring a pot of water to a boil. Score the bottom of each tomato with a knife and blanch in boiling water for 1 minute. Remove and place in ice water to cool. Peel the skin off the tomatoes and chop into chunks.
  2. In a large saucepan, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  3. Add the chopped tomatoes to the saucepan along with sugar, salt, and black pepper. Stir to combine and bring to a simmer. Let the mixture cook for 20-25 minutes, stirring occasionally.
  4. Remove from heat and stir in chopped basil. Taste and adjust seasoning if needed.
  5. Serve the stewed tomatoes hot as a side dish or use in your favorite recipes.
