This homemade dilly beans recipe is the perfect way to preserve fresh green beans. The combination of dill, garlic, and a tangy brine creates a delicious and crunchy snack that is perfect for adding to salads, sandwiches, or enjoying on their own.

Ingredients

  • 2 lbs fresh green beans
  • 4 cloves of garlic
  • 2 cups white vinegar
  • 2 cups water
  • 2 tbsp pickling salt
  • 4 sprigs of fresh dill
  • 1 tsp red pepper flakes

Directions

  1. Wash and trim the green beans, cutting them to fit into sterilized jars.
  2. Place garlic cloves, dill sprigs, and red pepper flakes in the bottom of each jar.
  3. Pack the green beans tightly into the jars, leaving about 1/2 inch of space at the top.
  4. In a saucepan, combine vinegar, water, and pickling salt. Bring to a boil, then pour the hot liquid over the green beans, filling each jar.
  5. Seal the jars with sterilized lids and bands, then process in a hot water bath for 10 minutes.
  6. Allow the dilly beans to cool before storing in a cool, dark place for at least 2 weeks before enjoying.
