Ingredients

  • 4 pounds ripe tomatoes
  • 4 onions, chopped

Directions

  1. Bring a large pot of water to a boil. Score an 'X' on the bottom of each tomato and blanch them in the boiling water for about 30 seconds. Remove the tomatoes and plunge them into an ice bath to cool. Peel off the skins and chop the tomatoes.
  2. In a large saucepan, sauté the onions, garlic, and bell peppers over medium heat until they are soft and translucent.
  3. Add the chopped tomatoes, apple cider vinegar, brown sugar, Worcestershire sauce, chili powder, paprika, mustard powder, salt, black pepper, and cayenne pepper to the saucepan. Stir well to combine all the ingredients.
  4. Simmer the sauce over low heat for about 1 hour, stirring occasionally to prevent sticking. The sauce should thicken and develop a deep flavor.
  5. Once the sauce has thickened, remove it from the heat and let it cool slightly. Use an immersion blender or a regular blender to purée the sauce until smooth and creamy.
  6. Transfer the chili sauce to sterilized jars while it is still hot. Seal the jars tightly and allow them to cool completely before storing them in the refrigerator.
