  • 1 can (20 ounces) pineapple slices in juice
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup cream of coconut
  • 1/2 cup unsweetened coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • 2 large eggs

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a 10-inch cast iron skillet or oven-safe frying pan, melt the butter over medium heat.
  3. Add the brown sugar to the melted butter and stir until well combined and bubbling.
  4. Remove the skillet from the heat and arrange the pineapple slices in a single layer on top of the brown sugar mixture.
  5. In a mixing bowl, whisk together the flour, baking powder, and salt.
  6. In a separate bowl, combine the cream of coconut, coconut milk, and vanilla extract.
  7. In a large mixing bowl, cream together the granulated sugar and eggs until light and fluffy.
  8. Add the flour mixture and the coconut milk mixture to the sugar and eggs, alternating between the two, beginning and ending with the flour mixture. Mix until just combined.
  9. Pour the cake batter over the pineapple slices in the skillet, spreading it evenly.
  10. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  11. Remove the cake from the oven and let it cool in the skillet for 10 minutes.
  12. Place a large serving plate on top of the skillet and carefully invert the cake onto the plate.
  13. Gently lift the skillet to reveal the pineapple topping on the cake.
  14. Serve the Cream of Coconut Pineapple Upside Down Cake warm or at room temperature. Enjoy!
