- 1/2 cup (1 stick) unsalted butter
- 1 cup packed light brown sugar
- 1 can (20 ounces) pineapple slices in juice
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup cream of coconut
- 1/2 cup unsweetened coconut milk
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
- 2 large eggs
Directions
- Preheat the oven to 350°F (175°C).
- In a 10-inch cast iron skillet or oven-safe frying pan, melt the butter over medium heat.
- Add the brown sugar to the melted butter and stir until well combined and bubbling.
- Remove the skillet from the heat and arrange the pineapple slices in a single layer on top of the brown sugar mixture.
- In a mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the cream of coconut, coconut milk, and vanilla extract.
- In a large mixing bowl, cream together the granulated sugar and eggs until light and fluffy.
- Add the flour mixture and the coconut milk mixture to the sugar and eggs, alternating between the two, beginning and ending with the flour mixture. Mix until just combined.
- Pour the cake batter over the pineapple slices in the skillet, spreading it evenly.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
