Ingredients

  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1/4 cup uncooked white rice
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1/2 cup diced carrots
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced tomatoes
  • 1/2 cup frozen peas

Directions

  1. In a large bowl, combine the ground beef, ground pork, rice, garlic, cumin, paprika, and salt. Mix well and shape into 1-inch meatballs.
  2. Heat the olive oil in a large pot over medium heat. Add the meatballs and cook until lightly browned, about 5 minutes. Remove the meatballs from the pot and set aside.
  3. Add the chicken broth, carrots, onion, celery, and tomatoes to the pot. Bring to a boil, reduce the heat to low, and simmer for 15 minutes.
  4. Add the meatballs and peas to the soup and simmer for an additional 10 minutes, or until the meatballs are cooked through and the vegetables are tender.
  5. Serve hot.
