Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup uncooked pasta
  • 2 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 4 large eggs
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the bell pepper, Italian seasoning, red pepper flakes, salt, and black pepper and cook for another 3 minutes.
  3. Add the pasta and vegetable broth and bring to a boil. Reduce heat to medium-low and simmer until the pasta is cooked, about 8 minutes.
  4. Stir in the Parmesan cheese and season to taste with salt and pepper.
  5. Using a large spoon, make four wells in the pasta mixture and crack an egg into each one. Cover the skillet and cook until the eggs are cooked to your liking, about 5 minutes.
  6. Garnish with parsley and serve.
