Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 cloves garlic, minced
  • 1/4 cup dry white wine
  • 2 tablespoons fresh basil, chopped
  • 1/4 cup prepared pesto
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese

Directions

  1. Turn the Instant Pot to the sauté setting and add the olive oil.
  2. Once the oil is hot, add the chicken cubes, salt, and pepper and cook, stirring occasionally, until the chicken is lightly browned, about 5 minutes.
  3. Add the garlic and cook for an additional 1 minute.
  4. Pour in the white wine and use a wooden spoon to scrape up any browned bits from the bottom of the pot.
  5. Add the basil, pesto, and chicken broth and stir to combine.
  6. Secure the lid and set the valve to sealing. Select the Pressure Cook/Manual setting and set the cooking time for 5 minutes at high pressure.
  7. Once the cooking time is up, carefully quick-release the pressure.
  8. Stir in the Parmesan cheese.
  9. Serve warm with your favorite side dishes.
