Directions
Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 3 minutes, stirring occasionally.
Add the carrots, celery, thyme, oregano, paprika, garlic powder, onion powder, black pepper, cumin, red pepper flakes, and sea salt. Sauté for 5 minutes, stirring occasionally.
Add the lentils and vegetable broth. Bring to a boil, reduce the heat to low, cover, and simmer for 20 minutes.
Add the diced tomatoes, spinach, and lemon juice. Simmer for 5 minutes.
Serve warm, garnished with fresh parsley, if desired.
