Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon red pepper flakes, optional
  • 1/4 teaspoon sea salt
  • 1 cup dried green lentils, rinsed and drained
  • 4 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 1 cup fresh spinach, coarsely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • Fresh parsley, for garnish

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 3 minutes, stirring occasionally.
  2. Add the carrots, celery, thyme, oregano, paprika, garlic powder, onion powder, black pepper, cumin, red pepper flakes, and sea salt. Sauté for 5 minutes, stirring occasionally.
  3. Add the lentils and vegetable broth. Bring to a boil, reduce the heat to low, cover, and simmer for 20 minutes.
  4. Add the diced tomatoes, spinach, and lemon juice. Simmer for 5 minutes.
  5. Serve warm, garnished with fresh parsley, if desired.
