1 pound okra, trimmed and cut into 1/2-inch pieces
1/4 cup water
1/4 teaspoon garam masala
Directions
Heat oil in a large skillet over medium heat. Add cumin and mustard seeds and cook until they begin to sizzle, about 30 seconds. Add turmeric, coriander, chili powder, garlic, and onion and cook, stirring, until onion is lightly browned, about 5 minutes.
Add salt and okra and cook, stirring, until okra is lightly browned, about 5 minutes. Add water and cook, stirring occasionally, until okra is tender and most of the liquid is absorbed, about 5 minutes.
Stir in garam masala and cook for 1 minute more. Serve hot.
